@dixiecutter and @Hilsman been raving about the pork shoulder steaks so this afternoon I made a suicide run to town and picked up a couple. First of all they are huge. second they are dirt cheap. And for the prize... they are freaking delicious!! I used a Grillmates Applewood rub on em. Seared them good then moved them indirect till they got to about 140*. Brushed on a very light coat of sweet baby rays and threw em back on the fire to 155*. Let em rest in a dutch oven for a few while we got everything else plated then cut one in half to share. My goodness these things are goooood!
Roasted taters and onions, green beans and toasted bread. SHW was happy. It's a good night!

(2) How many chickens do you have right now? Hoping to start with 6-8. (3) What breeds do you have? Looking at a mix of Rhode Island Reds, Barred Rock, Leghorns. Animals that bring good luck. I live in a hot climate and they seem to fair pretty well. I spoke to some 'chicken raisers'? At the Stock show this year, these were what they recommended.
